Triple Chocolate Mousse with Passion Fruit and Ovaltine Ice Cream

Chocolate mousse is one of the most beloved and classic desserts in every pastry chef’s repertoire. Amanda Moreno, our NY pastry chef, has created this incredible mousse presentation for our winter menu, sending this traditional dessert to stratospheric new heights with her ingenuity. She uses rich, dark chocolate cookies to create the base, topping it with two unbelievably smooth and silky layers of milk chocolate mousse and white chocolate mousse. A dark chocolate sculpture tops the tower of mousse, adding to the ultra-modern presentation. Amanda’s famous chocolate Ovaltine ice cream accompanies the mousse, enhancing the already luscious results. The presentation is completed by three perfect circles of a passion fruit sauce that brilliantly serves to heighten the intensity of the three chocolates.
