Holiday Spice Pumpkin Cheesecake

During the holiday season, we can’t help but crave those spices and flavors that are long associated with cozy activities like curling up by the fireplace and relishing the holiday spirit. Nutmeg, cloves, cinnamon: These sweet, warming spices are what holiday cooking, especially dessert, is all about.

This treat from pastry chef Amanda Moreno features all those classic spices, and more, to create a deeply satisfying holiday experience. The cheesecake starts with a perfectly spiced gingerbread crust. Rising from it is the luscious, moist cheese filling, so smooth, flavorful, rich, and satisfying with every bite. On top, a brittle of caramelized pecans adds earthy crunch and some salted caramel ice cream adds further contrasts of flavor, texture, and temperature. Poised on the very top is a beautiful garnish of candied pumpkin and toasted pumpkin seeds.
