Michael’s is well-known and well-respected for our 28-day dry-aged steaks. People come to us from all over (and keep coming back) for the opportunity to sit down, order our “steak frites,” as a plate of steak and French-fried potatoes is called in France, and enjoy a perfectly satisfying, classic meal.

Julia Child was obsessed with our 28-day dry-aged steak and Michael served it to her on numerous occasions, including preparing it for her personally at her Santa Barbara home as part of the last meal he cooked for her. Our steak was even given a shout-out in LA Weekly‘s review of Wolfgang Puck’s Cut.

At our restaurants, we serve our perfectly grilled steak with fries topped with a generous sprinkling of fresh thyme leaves and a salad of rocket (aka arugula). Everybody loves it.

So, what’s the secret? Apart from the fact that we char-grill the steaks perfectly, it all comes down to starting with the best meat available. For years, we have been buying our steaks from the meat experts at DeBragga and Spitler, a New York-based family business that has been doing it for several generations.
