Fresh Corn Side

Fresh corn is one of summer’s most beautiful, sweetest offerings. At Michael’s Santa Monica, we treat this fresh-from-the-farmers’-market corn with absolute simplicity to highlight its incredible flavor and texture. First, we grill it over a hot, open flame; then, we slice the kernels from the cob and season with sea salt and freshly ground pepper. A little butter, of course, adds richness, as does a generous fresh grating of Parmesan. For a final bright burst of color and flavor, we garnish with chives right before we send the generous helping off to your table.
