Seasonal Loup de Mer at Michael’s Santa Monica

This is our idea of a perfect dinner plate at Michael’s Santa Monica. We grill Mediterranean sea bass, loup de mer, to perfection. Accompanying the tender, flavorful, wood smoked-scented fillet are light, freshly housemade pappardelle noodles, Nueske bacon, English peas, and a surprising orange nage, adding up to a celebration of fresh, beautiful ingredients and simple, artful technique. The sweet peas and salty, smokey lardons add delightful little surprises of flavor and texture with every bite.
