Spring Scallops with Fava Beans and Peas

Maine diver scallops are a perennial Michael’s favorite. Our guests love these flavorful, tender gifts of the sea—and we love making our guests happy. This spring, Michael’s Santa Monica’s executive chef John-Carlos Kuramoto has created a scallop presentation that sings with seasonal flavors and color, serving the seared seafood with fresh fava beans and English peas on a bed of minted orzo, then topping it all with shredded Manchego cheese and fresh morels. A bright, zingy gremolata tops each perfect scallop. Dig in!
