Hydroponic tomatoes from a gorgeous greenhouse on Long Island are the stars of this exquisite salad from the kitchen of Michael’s New York. We showcase the sweetness of the colorful tomatoes by adding chunks of fresh, light watermelon to the mix. Fresh goat cheese from the Hudson Valley tastes perfect with the combination, adding rich but not at all overpowering flavor. As final flourishes, we add a drizzle of our 25-year-aged balsamic vinegar and a delicate sprinkling of basil. You will love it!
